• Mirbeau executive chef dishes on job placement

    Employment options for LIFE residents are vast and ever growing, with new establishments such as the Mirbeau Inn & Spa at The Pinehills looking to fill jobs.

    Mirbeau, which opened three years ago, is a 50-guestroom spa retreat situated on the Village Green of The Pinehills. The resort has several dining options overseen by Executive Chef Jeremy Martin. The Bistro & Wine Bar is its main restaurant. The seasonal Garden Bar is nestled amongst the ponds and gardens near the Bistro porch, and features a bar, wood-burning oven and outdoor seating. At the heart of the spa area, the Aqua Terrace provides casual dining and refreshments.

    “We’re still working on building our brand and the best way to do that is to create a positive work environment,” said Martin.

    Among the 18 employees under Martin’s watch, two are LIFE residents Caleb and Justin. They work as dishwashers, each putting in about 20 hours each week.

    “It entails a little of everything during the day shifts, from prep work to driving the golf cart out with the trash,” said Martin. “It’s awesome having them. Both are solid members of the team. They have such positive attitudes and they’re always on time.”

    Martin, who came to Mirbeau 15 months ago from the Stowe Mountain Lodge, has 26 years in the restaurant industry. He got his start at age 14 and enjoys mentoring young employees.

    “Justin does some cooking at home and it’s fun to see him work on that,” said Martin. “A lot of kids in their early 20s don’t know how to cook and it’s such a valuable life skill.”

    Mirabeau initially hired another LIFE resident, Nicole, last year and Martin said he was sad to see her move on. He hopes to continue to hire more LIFE employees down the road.
